Ingredients

  • 1 1/2 lb ground meat
  • 2 cans tomato paste
  • 2 cans water
  • 1 small onion, chopped
  • 4 potatoes, peeled and cubed
  • 16 oz frozen soup vegetables
  • seasonings of your choice (salt, pepper, garlic, etc.)

Instructions

  1. Brown the ground meat in a skillet and drain excess fat.
  2. Bring tomato paste and water to a boil in a large pot.
  3. Cook the chopped onion in the boiling mixture until tender.
  4. Add the peeled and cubed potatoes to the pot.
  5. Cook for 15 minutes until potatoes are slightly tender.
  6. Add the frozen soup vegetables, seasonings, and cooked ground meat to the pot.
  7. Simmer the soup for an additional 30 minutes.
  8. Serve hot with whole wheat crackers.
