Ingredients

  • 1/2 cup Wesson oil
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 3/4 cups milk
  • 3 eggs
  • 2 cups flour

Instructions

  1. Sift flour, salt, and baking powder together in a bowl.
  2. Separate the eggs and beat the yolks until light and fluffy.
  3. Stir the milk into the beaten yolks.
  4. Add the oil into the milk and yolk mixture.
  5. Gradually fold the wet mixture into the dry ingredients, stirring well.
  6. Beat the egg whites until stiff and fold them into the batter gently.
  7. Preheat the waffle iron and bake the waffles until golden and crispy.
  8. For a variation, use 1 cup buttermilk with ½ teaspoon baking soda in place of regular milk.
  9. Adding pecans to the batter enhances the flavor and texture.
