Ingredients

  • 2 cups sugar
  • 1 stick butter
  • 1 stick margarine
  • 3 eggs
  • 3/4 teaspoon soda
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla
  • 3 cups flour
  • 3 cups peeled and diced apples
  • 1 cup pecans
  • 1 can coconut

Instructions

  1. Cream together the butter and margarine.
  2. Add sugar and blend well.
  3. Beat in eggs one at a time.
  4. Mix in vanilla.
  5. Sift flour with salt and soda, then add to the mixture.
  6. Fold in peeled and diced apples, pecans, and coconut.
  7. Pour batter into a tube pan.
  8. Bake at 300°F for 1 hour.
  9. Increase temperature to 325°F and bake for an additional 25 minutes.
