Ingredients

  • 1 1/2 lb venison
  • 1 cup red wine
  • 1/4 cup olive oil
  • salt and pepper
  • vegetable oil
  • 1 lb mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 pint canned tomatoes
  • 1/4 cup chopped parsley
  • 1/4 teaspoon basil

Instructions

  1. Marinate the venison in red wine, olive oil, salt, and pepper overnight.
  2. Remove the meat from the marinade the next day and set aside.
  3. Saute the venison in vegetable oil in a large skillet until browned on both sides.
  4. Remove the meat from the skillet and saute minced garlic.
  5. Add the venison back to the skillet along with canned tomatoes, chopped parsley, sliced mushrooms, basil, and the reserved marinade.
  6. Simmer everything together for about an hour or until the meat is tender.
