Ingredients

  • 1 lb Italian sausage
  • 1 large onion, cut in wedges and separated
  • 1 medium green pepper, cut into strips, then halved
  • 1 lb zucchini, cut into 1/2-inch slices
  • 1/2 lb mushrooms, cut in half
  • 1/4 cup Marsala wine
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15 oz) can marinara sauce
  • 1 (12 oz) package rigatoni
  • 1/2 lb Bel Paese cheese, sliced thin, or Monterey Jack cheese, grated

Instructions

  1. Brown the whole sausages in a 4-quart pot until thoroughly cooked. Remove sausages, cool, and slice into 1/4-inch slices.
  2. In the same pot, sauté the onions, green peppers, zucchini, and mushrooms until tender.
  3. Add the sliced sausage back to the pot along with the marinara sauce and Marsala wine.
  4. Season with salt and pepper, then simmer for 10-15 minutes to meld flavors.
  5. Meanwhile, cook the rigatoni according to package instructions until al dente. Drain.
  6. Combine cooked rigatoni with the sausage and vegetable sauce.
  7. Layer with sliced Bel Paese or grated Monterey Jack cheese on top and serve hot.
