Ingredients
- 1 lb Italian sausage ⓘ
- 1 large onion, cut in wedges and separated
- 1 medium green pepper, cut into strips, then halved ⓘ
- 1 lb zucchini, cut into 1/2-inch slices
- 1/2 lb mushrooms, cut in half ⓘ
- 1/4 cup Marsala wine ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon pepper
- 1 (15 oz) can marinara sauce ⓘ
- 1 (12 oz) package rigatoni ⓘ
- 1/2 lb Bel Paese cheese, sliced thin, or Monterey Jack cheese, grated ⓘ
Instructions
- Brown the whole sausages in a 4-quart pot until thoroughly cooked. Remove sausages, cool, and slice into 1/4-inch slices.
- In the same pot, sauté the onions, green peppers, zucchini, and mushrooms until tender.
- Add the sliced sausage back to the pot along with the marinara sauce and Marsala wine.
- Season with salt and pepper, then simmer for 10-15 minutes to meld flavors.
- Meanwhile, cook the rigatoni according to package instructions until al dente. Drain.
- Combine cooked rigatoni with the sausage and vegetable sauce.
- Layer with sliced Bel Paese or grated Monterey Jack cheese on top and serve hot.
