Ingredients

  • catfish pieces
  • potatoes
  • onions
  • salt
  • pepper

Instructions

  1. Place 4 or 5 strips of bacon in a large cast-iron pot and cook.
  2. Leave the bacon in the bottom of the pot.
  3. Layer fish pieces, sliced potatoes, sliced onions, salt, and pepper in the pot until it is full.
  4. Salt and pepper each layer.
  5. Add enough water to just about cover the ingredients.
  6. Bring the mixture to a boil.
  7. Reduce heat to simmer, cover, and cook for about 1 hour or until the potatoes are tender.
  8. Serve with white bread or cornbread.
