- Place 4 or 5 strips of bacon in a large cast-iron pot and cook.
- Leave the bacon in the bottom of the pot.
- Layer fish pieces, sliced potatoes, sliced onions, salt, and pepper in the pot until it is full.
- Salt and pepper each layer.
- Add enough water to just about cover the ingredients.
- Bring the mixture to a boil.
- Reduce heat to simmer, cover, and cook for about 1 hour or until the potatoes are tender.
- Serve with white bread or cornbread.
