Viola'S Baked Fish
A hearty baked fish dish featuring tender fish fillets topped with crispy bacon, roasted potatoes, onions, and flavorful tomatoes and bell peppers, perfect for a comforting meal.

Instructions
- Quarter the potatoes and onions.
- Cook the potatoes and onions in a pot of water for 30 minutes.
- Roll the fish fillets in butter, salt, and pepper.
- Place the fish fillets skin down in a baking pan.
- Put bacon strips on top of the fish.
- Using a slotted spoon, place the cooked potatoes and onions around and on top of the fish.
- Pour canned tomatoes over the fish and vegetables.
- Add chopped bell pepper on top.
- Pour some juice from the cooked potatoes and onions over the fish until almost covered.
- Bake in the oven at 350°F for 30 minutes.
