Viola'S Baked Fish

A hearty baked fish dish featuring tender fish fillets topped with crispy bacon, roasted potatoes, onions, and flavorful tomatoes and bell peppers, perfect for a comforting meal.

Ingredients

  • 8 medium potatoes
  • 3 large onions
  • 1/2 cup chopped bell pepper
  • 1 pint tomatoes
  • 6 pieces bacon
  • 6 pieces thick fish fillets

Instructions

  1. Quarter the potatoes and onions.
  2. Cook the potatoes and onions in a pot of water for 30 minutes.
  3. Roll the fish fillets in butter, salt, and pepper.
  4. Place the fish fillets skin down in a baking pan.
  5. Put bacon strips on top of the fish.
  6. Using a slotted spoon, place the cooked potatoes and onions around and on top of the fish.
  7. Pour canned tomatoes over the fish and vegetables.
  8. Add chopped bell pepper on top.
  9. Pour some juice from the cooked potatoes and onions over the fish until almost covered.
  10. Bake in the oven at 350°F for 30 minutes.
