Ingredients

  • 1 onion, chopped
  • 4 Tbsp. butter
  • 4 leeks, sliced
  • 2 stalks celery, chopped
  • 2 potatoes, sliced
  • 4 c. chicken broth
  • 1 c. cream
  • 1 Tbsp. chopped chives
  • salt and pepper

Instructions

  1. Melt butter in large pot.
  2. Saute onions, leeks and celery. Stir until limp.
  3. Stir in potatoes and stock; cook until potatoes are tender.
  4. Puree in blender and chives; stir in cream. Refrigerate.
