Walnut And Parsley Quick Bread

Ingredients

  • 4 cups self-rising flour
  • 4 tbsp (1/2 stick) butter, chopped
  • 1/2 cup grated Cheddar cheese
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup chopped parsley
  • 1 cup milk, plus additional, for brushing
  • None None Sea salt

Instructions

  1. Preheat oven to 425°F. Lightly grease a baking pan.
  2. Sift flour into a large bowl. Add butter, and rub in using fingertips until mixture resembles breadcrumbs. Stir in cheese, walnuts and parsley. Season to taste.
  3. Make a well in the center of the dry ingredients. Add combined milk and 1 cup water all at once. Mix to a soft, sticky dough.
  4. Turn onto a lightly floured surface. Divide dough evenly in 2 pieces. Knead each gently and then press into rounds. Place both rounds on prepared pan. Brush with a little additional milk and sprinkle with sea salt.
  5. Bake for 25-30 mins, until golden and hollow when tapped on the underside. Serve warm with butter.
