Ingredients

  • 2 Tbsp. red onion, minced
  • 2 1/2 lb. watermelon
  • 3 Tbsp. fresh lime juice, divided
  • 2 Tbsp. green peppercorn, rinsed and patted dry
  • 1/8 tsp. salt
  • 1/8 tsp. cayenne pepper

Instructions

  1. Cover the red onion with cold water and let stand for 10 minutes to remove some of the acidity.
  2. Drain and pat dry with paper towels.
  3. Remove the rind from the watermelon and cut into 1/2-inch cubes.
  4. Remove as many of the seeds as possible.
  5. Combine watermelon, red onion, 2 tablespoons lime juice, green peppercorn, salt, and cayenne in a bowl.
  6. Refrigerate for about 1 hour.
  7. Just before serving, stir in the remaining tablespoon of lime juice.
