Ingredients

  • 2 cups watermelon, seeded, 1-inch pieces
  • 2 tablespoons grenadine
  • 1/2 teaspoon grated lemon peel
  • 1 envelope unflavored gelatin
  • 1 egg white
  • 1/8 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/4 cup sugar

Instructions

  1. Place watermelon, grenadine, and lemon peel in blender. Blend on high speed until smooth.
  2. Pour into a saucepan, sprinkle with gelatin.
  3. Heat over low heat until gelatin dissolves. Refrigerate, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
  4. Beat egg white, cream of tartar, and salt in a large bowl until foamy.
  5. Beat in sugar, one tablespoon at a time, until stiff and glossy.
  6. Fold in watermelon mixture.
  7. Beat whipping cream in a chilled bowl until stiff.
  8. Fold whipped cream into the meringue mixture and spoon into dessert dishes.
  9. Refrigerate for 2 hours before serving.
