Ingredients

  • 1 pkg. yellow cake mix
  • 1 1/2 lb. confectioners' sugar
  • juice of 2 lemons, strained
  • grated rind of 2 lemons

Instructions

  1. Mix the yellow cake mix according to package directions, omitting 3 tablespoons of water.
  2. Drop the batter by teaspoonfuls into greased and floured miniature cupcake pans.
  3. Bake at 375°F (190°C) for 10 to 12 minutes until the cakes are golden and cooked through.
  4. While the cakes are baking, combine the confectioners' sugar, strained lemon juice, and grated lemon rind to make the coating mixture.
  5. Remove the baked cakes from the oven and immediately drop them into the lemon mixture to coat.
  6. Use a slotted spoon to remove the coated cakes and place them on wax paper to cool and set.
  7. Repeat until all batter is used. This recipe makes approximately 4 to 5 dozen cakes.
  8. Serve warm or cold, as desired.
