Ingredients

  • 1 c. butter or margarine
  • 1 c. lard
  • 2 c. sugar
  • 3 eggs
  • 1/4 c. milk
  • 7 1/2 c. flour
  • 2 tsp. lemon extract
  • 1 tsp. salt
  • 2 tsp. nutmeg
  • 1 tsp. cream of tartar
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 lb. currants

Instructions

  1. Cream butter, lard, and sugar together until well combined.
  2. Add beaten eggs and milk to the mixture and mix well.
  3. Sift together the flour, salt, nutmeg, cream of tartar, baking soda, and baking powder, then add to the mixture.
  4. Stir in the plumped and drained currants.
  5. Roll the dough on a lightly floured board to a 1/4-inch thickness.
  6. Cut out shapes using a cookie cutter or biscuit cutter.
  7. Bake on an ungreased griddle, turning when brown.
  8. Turn only once during cooking.
  9. Using an electric frypan set at 300°F, fry for 5 minutes on each side.
