A hearty and flavorful casserole combining ground beef, vegetables, macaroni, and spicy taco seasoning, perfect for a family dinner that satisfies cravings for comfort food with a southwestern twist.

Ingredients

  • 1 lb. ground beef
  • 1/3 cup onion
  • 1/3 cup bell pepper
  • 1 can corn
  • 1 can tomato paste
  • 1 can water
  • 1 package macaroni and cheese
  • 1/2 package taco mix

Instructions

  1. Brown the ground beef in a skillet.
  2. Add chopped onions and bell peppers to the beef.
  3. Stir-fry for 1 minute.
  4. Add corn, tomato paste, water, and macaroni and cheese as directed on the package.
  5. Mix all ingredients well.
  6. Add taco seasoning, salt, and pepper to taste.
  7. Grease a 2 1/2-quart casserole dish.
  8. Pour the mixture into the prepared casserole dish.
  9. Cover and bake at 350°F for 15 to 20 minutes.
