Wet-Heavy Cornbread

Ingredients

  • 2 c. white corn meal
  • 3 c. boiling water
  • 2 c. evaporated milk
  • 1/2 c. sugar
  • 1 Tbsp. sugar
  • 3 eggs
  • 1 tsp. salt

Instructions

  1. Bring 3 cups of water to a boil.
  2. In a large mixing bowl, combine the cornmeal, sugar, and salt.
  3. Add the boiling water to the dry ingredients and stir well to form a thick batter.
  4. Stir in the evaporated milk and beaten eggs until fully incorporated.
  5. Add the softened butter or oleo and mix until smooth.
  6. Pour the batter into a greased baking dish or skillet.
  7. Bake at 375°F (190°C) for approximately 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Serve warm.
