Ingredients

  • 2 cups scalded milk
  • 2/3 cup sugar
  • 1 cup dry milk
  • 2 tablespoons yeast
  • 1/2 cup wheat germ
  • 9 cups white flour
  • 1 cup shortening
  • 2 tablespoons salt
  • 4 cups water
  • 6 to 7 cups wheat flour

Instructions

  1. Scald the milk.
  2. While the milk is cooling, add sugar, salt, and shortening to the milk.
  3. Add yeast to 1/2 cup warm water (115°F), let stand a few minutes, then add to the milk mixture.
  4. Add dry milk, wheat germ, molasses, 4 cups water, and wheat flour; mix well.
  5. Let this mixture rise until double in size, looking bubbly and spongy.
  6. Add white flour and stir in well.
  7. Knead the dough thoroughly.
  8. Let the dough rise once more, then form into loaves and place in greased pans.
  9. Bake at 350°F for 45 minutes.
