Wheat Germ Corn Muffins

Ingredients

  • 1 c. whole-wheat flour
  • 1/2 c. wheat germ
  • 1/2 c. cornmeal
  • 1 egg, beaten
  • 1/4 c. butter, melted
  • 2 Tbsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk

Instructions

  1. Stir together flour, wheat germ, cornmeal, sugar, baking powder and salt.
  2. Make a well in the center.
  3. Combine egg, milk and melted butter; add all at once to flour mixture.
  4. Stir just until moistened; batter should be lumpy.
  5. Grease muffin pan or line with paper bake cups; fill 2/3 full.
  6. Bake at 400° for 20 minutes or until muffins are lightly browned.
  7. Serve warm.
  8. Makes 12 muffins.
