Ingredients

  • 1 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 3 c. cooked navy beans
  • 1 large tomato, chopped
  • 1/4 c. minced fresh basil
  • 1/2 c. grated Parmesan cheese
  • 1 Tbsp. lemon juice

Instructions

  1. In a 12-inch nonstick skillet, heat the olive oil over low heat.
  2. Add the minced garlic and cook, stirring occasionally, for 4 minutes or until lightly colored and fragrant.
  3. Stir in the cooked beans, chopped tomato, and minced basil. Cook for about 7 minutes or until heated through.
  4. Stir in the grated Parmesan cheese and lemon juice.
  5. Serve hot or at room temperature.
