A fresh and crunchy green salad with toasted pine nuts, garlic, Dijon mustard, and Parmesan, perfect for light lunches or as a side dish with a flavorful kick.

Ingredients

  • 1 clove garlic
  • 1 to 2 tsp. Dijon mustard
  • white vinegar
  • olive oil
  • 1 Tbsp. Parmesan cheese
  • 1/2 cup pine nuts, toasted

Instructions

  1. Boil garlic in water for 5 minutes.
  2. Remove garlic and crush in a wooden bowl.
  3. Add Dijon mustard to make a paste.
  4. Add vinegar and olive oil to taste and Parmesan cheese.
  5. Pour the dressing over romaine lettuce, toss, and add toasted pine nuts.
