White Chocolate Fluff

Ingredients

  • 150 g white chocolate, good quality, melted
  • 1/3 cup milk
  • 2 egg whites
  • 1/4 teaspoon lemon juice
  • 1 cup fresh cream (whipping cream or double cream)
  • 2 tablespoons caster sugar
  • petit silver dragees, to decorate (optional)

Instructions

  1. Add the Milk to the melted White Chocolate - stir quickly to combine.
  2. Beat Egg Whites until stiff peaks form - add the Lemon Juice - beat another 30 seconds - set aside.
  3. Beat the Fresh Cream and the Caster Sugar until soft peaks form.
  4. Gently fold in the whipped Egg Whites to the White Chocolate.
  5. Add the whipped Cream and fold/stir until smooth.
  6. Scoop mixture into small dishes - chill 20 minutes - remove from refrigerator and decorate with Silver Dragees.
  7. Return to the refrigerator to chill completely.
