Ingredients

  • 1 1/2 c. sugar
  • 1/2 tsp. light corn syrup
  • 2/3 c. boiling hot water
  • 2 egg whites
  • 1 tsp. vanilla

Instructions

  1. Combine sugar, light corn syrup, and boiling hot water in a saucepan.
  2. Place over low flame and stir constantly until the sugar is dissolved and the mixture boils. Continue cooking until a small amount of syrup forms a soft ball in cold water or spins a thread when dropped from the tip of a spoon.
  3. Pour the hot syrup in a fine stream over the beaten egg whites, beating constantly.
  4. Add vanilla and continue beating until the mixture loses its gloss and becomes fluffy.
