Ingredients

  • 3 grouse, cleaned and cut into serving pieces
  • 1 egg, slightly beaten
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • garlic salt to taste
  • 1 cup flour
  • 1/4 cup butter
  • 1/2 cup vegetable oil

Instructions

  1. Dip pieces of grouse in a mixture of egg, milk, salt, pepper, and garlic salt, then roll in flour.
  2. Put butter and vegetable oil in a skillet and heat to frying temperature.
  3. Brown the pieces well on all sides.
  4. Remove from skillet and place in a single layer in a baking dish.
  5. Add drippings from the skillet to the mushroom soup and mix well.
  6. Spoon the mushroom soup mixture over the grouse pieces.
  7. Add water to the bottom of the dish.
  8. Cover the dish.
  9. Bake at 350°F for 1 hour or until the grouse is tender.
