Ingredients

  • 1 1/2 lb. ground beef
  • 1 onion, chopped
  • 1 clove garlic, chopped (optional)
  • 1 can mushroom soup
  • 1 can enchilada sauce
  • 1 can Ro-Tel tomatoes
  • 1/2 can water
  • 1 (12 oz.) pkg. corn tortillas
  • 1/2 lb. grated Velveeta cheese

Instructions

  1. Brown meat, onions and garlic.
  2. Add enchilada sauce.
  3. In saucepan, heat the mushroom soup, water and tomatoes.
  4. In a 9 x 13-inch pan, place 6 tortillas, a layer of soup and a layer of meat sauce and a layer of grated cheese.
  5. Repeat layers with cheese on top.
  6. Bake at 350° until bubbly, about 30 minutes.
