Wilted Onions

Vividly tangy and savory, wilted onions offer a perfect accompaniment for grilled meats or sandwiches, with a balance of vinegar, spices, and a touch of heat from Tabasco.

Ingredients

  • 1 1/2 lb. red onions, thinly sliced
  • 1/2 cup vegetable oil
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/2 teaspoon pepper
  • 2 teaspoon salt
  • 1 tablespoon sugar
  • 3 or 4 tablespoons Tabasco sauce

Instructions

  1. Put onions in a ceramic or glass bowl.
  2. Bring vegetable oil, white vinegar, water, pepper, salt, sugar, and Tabasco sauce to a boil.
  3. Pour the hot mixture over the onions and let stand.
  4. When cool, refrigerate overnight.
  5. These wilted onions keep well in a tightly closed container.
