Ingredients

  • 3 medium tomatoes, peeled
  • 1 1/2 c. diced potatoes
  • 1 Tbsp. chopped onion
  • 2 tsp. salt
  • pepper
  • 4 c. boiling water
  • 1 c. dairy sour cream
  • 2 Tbsp. flour

Instructions

  1. Dice tomatoes into saucepan; add potatoes, onion, salt and a few grains pepper.
  2. Add boiling water; cook until tender.
  3. Mix sour cream and flour together in double boiler; cook over hot water, stirring constantly, until thickened.
  4. Stir sour cream mixture gradually into tomato-potato mixture.
  5. Season to taste with additional salt and pepper.
  6. Reheat but do not boil.
