Ingredients

  • small red potatoes
  • 8 oz. carrots, cut up
  • 8 oz. yellow squash, cut up
  • 2 cups fresh or frozen vegetables (peas)
  • scallions
  • parsley

Instructions

  1. Cook potatoes in a pan of water for 13 minutes.
  2. Add carrots and cook for 5 minutes.
  3. Add yellow squash and cook for 2 minutes.
  4. Add peas and cook for 2 minutes.
  5. Drain the vegetables and place in a dish.
  6. Add melted butter or margarine.
  7. Sprinkle with scallions and parsley, cut up.
