- Wash the meat, salt, and dust with caraway seed.
- Place the meat fat side up in a roasting pan. You may score the fat in little squares if desired.
- Add a little water to the pan, cover, and roast in a 350°F oven.
- After about an hour, turn the meat and return it to the oven uncovered.
- Bake until the skin is red and the meat is tender, estimating about 30 minutes per pound.
- Baste frequently with the drippings from the pan during roasting.
