Goose Liver Pate

Rich and creamy goose liver pâté with aromatic herbs, perfect as a luxurious appetizer served cold on toasted rye bread, appealing to gourmet palates.

Ingredients

  • 12 oz. goose, duck or chicken livers
  • 4 oz. butter
  • 1 Tbsp. chopped thyme
  • 1 Tbsp. chopped rosemary
  • 1/2 tsp. powdered bay leaves
  • 1/2 cup dry sherry
  • 1 Tbsp. brandy
  • 1 tsp. honey
  • salt

Instructions

  1. Lightly sauté the livers in butter so they are still pink inside.
  2. Add chopped thyme, chopped rosemary, powdered bay leaves, sherry, brandy, honey, salt, and pepper, then simmer for 2 minutes.
  3. Finely puree the mixture, one cupful at a time, in a food processor or blender.
  4. Pack the pureed mixture into an earthenware jar and refrigerate for 24 hours.
  5. Serve cold on small pieces of toasted rye bread.
