- Beat egg whites until stiff peaks form.
- In a mixer, beat yams until fluffy.
- Add cinnamon, sugar, egg yolks, pineapple juice, and melted margarine to the yams.
- Fold in the beaten egg whites gently.
- Spray a casserole dish with cooking spray (Pam).
- Pour the yam mixture into the casserole dish.
- Sprinkle chopped pecans on top.
- Bake uncovered at 350°F for 25 to 30 minutes.
