Ingredients

  • 2 cans drained yams
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 egg yolks
  • 1 cup pineapple juice
  • 1/2 cup melted margarine

Instructions

  1. Beat egg whites until stiff peaks form.
  2. In a mixer, beat yams until fluffy.
  3. Add cinnamon, sugar, egg yolks, pineapple juice, and melted margarine to the yams.
  4. Fold in the beaten egg whites gently.
  5. Spray a casserole dish with cooking spray (Pam).
  6. Pour the yam mixture into the casserole dish.
  7. Sprinkle chopped pecans on top.
  8. Bake uncovered at 350°F for 25 to 30 minutes.
