Ingredients

  • 1/2 lb lean sausage
  • 3 eggs
  • 1 cup flour
  • 1 cup milk
  • 1 tablespoon chopped chives
  • 1/2 teaspoon salt

Instructions

  1. Brown the sausage in a 10-inch ovenproof skillet.
  2. Do not drain; keep the sausage hot.
  3. In a bowl, beat the eggs for 2 minutes.
  4. Add the flour, milk, and salt; beat until smooth.
  5. Stir in chopped chives.
  6. Pour the batter over the sausage in the skillet.
  7. Bake at 400°F for 15 minutes.
  8. Lower the oven temperature to 350°F.
  9. Bake for an additional 5 to 10 minutes until browned.
