Ingredients

  • 1 cup butter, divided
  • 1/4 cup granulated sugar
  • 1 square baking chocolate
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 2 cups confectionary sugar
  • 4 squares dark chocolate semi-sweet
  • 2 cups fine graham cracker crumbs
  • 1/2 cup chopped walnuts
  • 1 cup coconut
  • 2 tablespoons instant vanilla pudding
  • 3 tablespoons milk

Instructions

  1. Put 1/2 cup butter, sugar, unsweetened chocolate, and vanilla in the top of a double boiler until blended.
  2. Add beaten egg and cook for 5 minutes, stirring constantly.
  3. Add graham cracker crumbs, chopped walnuts, and coconut; mix well.
  4. Press the mixture firmly into a buttered 9x9x2 inch pan.
  5. Cool and chill for 15 minutes.
  6. Cream 1/2 cup butter, then beat in vanilla pudding mix and milk until smooth.
  7. Gradually add confectionary sugar and beat until creamy.
  8. Spread the pudding mixture over the first layer and chill for 15 minutes.
  9. Melt dark chocolate and 1 tablespoon butter over low heat and spread over the chilled pudding layer.
  10. Chill until the chocolate topping is firm.
  11. Cut into 1-inch squares and store in the refrigerator.
