Ingredients

  • 1 cup long grain rice
  • 3 cups milk
  • 1 cup evaporated milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2/3 cup sugar

Instructions

  1. In a heavy medium saucepan, bring 3 cups of water to a boil. Add rice to boiling water.
  2. Reduce heat to very low, cover, and cook for about 15 minutes or until rice is tender.
  3. Remove from heat and strain the water off the rice in a strainer.
  4. Return rice to the saucepan and add milk, evaporated milk, sugar, ground cinnamon, ground nutmeg, and vanilla extract.
  5. Cook over low heat, stirring occasionally, until the mixture is heated through and slightly thickened.
