Zesty baked catfish features tender fillets coated with a flavorful bread crumb mixture, seasoned with tarragon and lemon pepper, baked to perfection for a light, tasty meal.

Ingredients

  • 1/2 cup fine dry bread crumbs
  • 1/2 teaspoon dried whole tarragon
  • 1/4 teaspoon lemon and pepper seasoning
  • 4 (4 oz.) farm raised catfish fillets
  • 3 tablespoons commercial reduced calorie French dressing

Instructions

  1. Combine bread crumbs, tarragon, and lemon and pepper seasoning in a bowl.
  2. Stir well to mix evenly.
  3. Brush each fillet with French dressing.
  4. Roll the fillets in the bread crumb mixture until well coated.
  5. Arrange the coated fillets on a rack of a broiler pan coated with cooking spray.
  6. Bake uncovered at 450°F for 10 minutes.
  7. Sprinkle the fillets evenly with cheese.
  8. Bake an additional 2 minutes or until the fish flakes easily with a fork.
