Ingredients

  • 8 to 10 squash (yellow or zucchini or mixed), sliced or cubed
  • 1 lb. mild Cheddar cheese, grated
  • 1 can Ro-Tel tomatoes
  • Italian bread crumbs
  • butter or margarine

Instructions

  1. Mix the sliced or cubed squash, Ro-Tel tomatoes (do not drain), and 1 1/2 to 2 cups of water in a large pot. Stew on medium heat for about 20 minutes or until the squash is tender.
  2. Preheat the oven to 350°F (175°C).
  3. In a baking dish, spoon in a layer of the squash mixture.
  4. Dot with butter, sprinkle with a handful of Italian bread crumbs, and add a layer of grated Cheddar cheese.
  5. Repeat layering until all the mixture is used, ending with a cheese layer on top.
  6. Bake at 350°F (175°C) for 20 to 25 minutes until bubbly and golden.
