- Mix the sliced or cubed squash, Ro-Tel tomatoes (do not drain), and 1 1/2 to 2 cups of water in a large pot. Stew on medium heat for about 20 minutes or until the squash is tender.

- In a baking dish, spoon in a layer of the squash mixture.
- Dot with butter, sprinkle with a handful of Italian bread crumbs, and add a layer of grated Cheddar cheese.
