Zucchini Bread Oatmeal

Ingredients

  • 1 cup Unsweetened Almond Milk Or Water
  • 1/2 teaspoons Ground Cinnamon
  • 1/3 cups Old Fashioned Rolled Oats
  • 2 teaspoons Chia Seeds
  • 1-1/2 cup Grated Zucchini (Preferably Medium Size And Not Too Fine, Which Tends To Make The Oatmeal Mushy)
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Packed Brown Sugar, To Top
  • Chopped Walnuts For Topping
  • 2 teaspoons Maple Syrup, Honey Or Butter, To Serve (optional)

Instructions

  1. In a small pot, add milk or water, cinnamon and oats. Bring to a boil and simmer over medium heat, stirring a few times, about 3 minutes.
  2. Add in the chia seeds and grated zucchini. Continue to simmer, stirring occasionally, about 4 minutes or until desired texture is reached.
  3. When cooked, remove from heat and stir in vanilla and brown sugar. Top with chopped walnuts and perhaps a drizzle of melted butter, honey or maple syrup. Keep it low in sugar-this is breakfast, people.
