Ingredients

  • 1 large tender zucchini (6 cups)
  • 6 cups sugar
  • 6 oz crushed pineapple (do not drain)
  • 1 (6 oz) apricot or peach jello

Instructions

  1. Peel and seed 1 large, tender zucchini.
  2. Cut zucchini on a cole slaw cutter and measure 6 cups.
  3. Stir the zucchini, sugar, crushed pineapple, and jello together.
  4. Bring the mixture to a boil and cook for 6 minutes.
  5. Add the jello to the hot mixture and stir well.
  6. Pour into jars and let cool.
