Zucchini Souffle(Delicious!)

Ingredients

  • 2 to 3 zucchini, grated
  • 1 medium to large onion, chopped
  • 1/2 c. oil
  • 1 c. Bisquick (baking mix)
  • 3 eggs
  • 1 tsp. grated Parmesan cheese
  • sprinkle of pepper

Instructions

  1. Mix all ingredients in large bowl.
  2. Grease a souffle pan or casserole dish.
  3. Bake at 350°, uncovered, about 45 minutes, or until golden on top.
  4. Cut into squares and serve.
  5. Great side dish!
