A delightful zucchini dessert crusted with a flaky flour mixture and filled with a sweet, spiced zucchini lemon filling, perfect for summer gatherings or family treats.

Ingredients

  • 4 cups flour
  • 3 cups sugar
  • 1/4 teaspoon salt
  • 3 sticks oleo
  • 8 cups zucchini, peeled, seeded, and cubed
  • 2/3 cup lemon juice
  • 1 to 1.5 teaspoons cinnamon
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Mix flour, 1 cup sugar, and salt.
  2. Cut in oleo until the mixture is crumbly.
  3. Pat half of the mixture into a 9 x 13-inch pan.
  4. Bake at 375°F for 10 minutes.
  5. Cook zucchini and lemon juice until tender.
  6. Add 2 cups sugar, cinnamon, and nutmeg; simmer for 4 minutes.
  7. Add 1/2 cup of the flour mixture into the zucchini mixture.
  8. Stir well until it thickens.
  9. Pour the filling onto the prepared crust.
  10. Sprinkle the remaining flour mixture over the filling.
  11. Bake at 375°F for 30 to 35 minutes.
