Ingredients

  • 4 to 5 medium zucchini, sliced into 1/4-inch pieces (half circles)
  • 1 medium onion, chopped
  • 4 Tbsp. olive oil
  • 2 to 3 leaves basil
  • 1 lb. cooked rigatoni
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Saute chopped onion in olive oil until soft.
  2. Add sliced zucchini, basil leaves, salt, and pepper; saute until zucchini is cooked but still firm.
  3. Combine cooked rigatoni and zucchini mixture in a large pan over low-medium heat for 3 to 5 minutes.
  4. Remove from heat and stir in grated Parmesan cheese.
  5. Serve immediately.
