Ingredients

  • 16 oz. thin spaghetti
  • 10 oz. chopped spinach, thawed and drained
  • 15 oz. Ricotta cheese
  • 3 eggs
  • 1/2 cup grated Parmesan cheese
  • 2 green onions, thinly sliced
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 27.5 oz. jar spaghetti sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 12 oz. shredded Mozzarella cheese

Instructions

  1. Cook spaghetti as directed on the package; drain.
  2. Combine thawed and drained chopped spinach, ricotta cheese, beaten eggs, grated Parmesan cheese, sliced green onions, pepper, and ground nutmeg in a medium bowl.
  3. Place half of the spaghetti in a 12 x 8 1/2-inch baking dish.
  4. Spoon half of the spinach mixture over the spaghetti.
  5. Sprinkle with half of the shredded Mozzarella cheese.
  6. Top with the remaining spaghetti mixture.
  7. Cover and bake for 25 minutes or until hot and bubbly.
  8. Uncover, sprinkle with remaining cheese, and bake for an additional 5 minutes until the cheese melts.
  9. Let stand for 10 minutes before serving.
