Zucchini Yellow Squash

Ingredients

  • 2 lb. squash or 2 medium squash
  • 1/4 chopped onion
  • 1 can cream of chicken soup
  • 1 c. (8 oz.) sour cream
  • 1 c. shredded carrots
  • 1 (8 oz.) pkg. seasoned stuffing mix
  • 1/2 c. butter or margarine

Instructions

  1. Cook sliced squash and onion in boiling water, slightly salted, 4 minutes.
  2. Squash must be a little crisp; drain.
  3. Combine chicken soup and sour cream; stir in carrots, squash, onion and salt to taste.
  4. Combine stuffing mix with butter; spread half in baking dish.
  5. Spoon in vegetable mixture.
  6. Sprinkle on rest of stuffing.
  7. Bake at 350° for 25 minutes.
  8. Serves 6.
