Ingredients

  • 1 lb. soup bones with meat
  • celery
  • carrots
  • onions
  • 3/4 lb. dried mushrooms
  • 1 1/2 qt. water

Instructions

  1. Wash dried mushrooms, slice them, and cover with cold water for 2 hours to soak.
  2. Rinse bones and meat with cold water. Add the 1 1/2 quarts water to the meat and vegetables to make stock.
  3. Cook until the meat and vegetables are tender. Strain the meat and vegetables from the stock.
  4. Add the mushroom soaking liquid (stock) to the mushrooms and simmer until the mushrooms are tender.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped parsley. Serve the soup with dumplings.
