Ingredients

  • 3 ounces hot peppers, dried, crushed
  • 2 ounces black peppercorns
  • 8 ounces cumin seeds
  • 10 ounces coriander seeds
  • 2 ounces turmeric
  • 2 ounces ground ginger
  • 13 ounce cloves, whole or 13 ounce a pinch ground cloves
  • 13 ounce cinnamon sticks or 12 teaspoon ground cinnamon
  • 10 cardamom pods

Instructions

  1. Roast the spices in a 350 degF/180 deg C oven for about 5 - 7 minutes, until you can smell the fragrance.
  2. Grind in a blender or coffee bean grinder.
  3. Store in an airtight container away from direct heat or light.
  4. Use within 3 months.
