Ingredients

  • 2 c. sifted flour
  • 2 1/4 tsp. baking powder
  • 1/2 c. vegetable shortening
  • 1 tsp. vanilla
  • 2 eggs
  • 1 c. plus 1 Tbsp. sugar
  • 3/4 tsp. salt
  • 3/4 c. milk
  • 1/2 tsp. orange extract
  • 1/2 c. pecans

Instructions

  1. Cream the vegetable shortening with sugar in a large bowl.
  2. Add the sifted flour, baking powder, salt, and orange extract alternately with the milk, mixing well after each addition.
  3. Stir in the beaten eggs and chopped pecans.
  4. Pour the batter into a greased 9 x 5-inch loaf pan.
  5. Bake at 350°F (175°C) for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the loaf to cool before removing from the pan and slicing.
