Ingredients

  • 1/3 cup refried beans
  • fresh vegetable tray
  • 1 package flour tortillas
  • 1 chicken (3 to 3 1/2 lb.)
  • 1 package taco seasoning
  • 6 oz. Cheddar cheese
  • shredded lettuce
  • shredded tomato
  • chopped onion

Instructions

  1. Remove skin from chicken and simmer until meat falls off the bone.
  2. Cut the cooked chicken into small pieces in a skillet.
  3. Combine the cooked chicken, taco seasoning, and 1 1/2 cups water in the skillet.
  4. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes until desired consistency.
  5. Heat flour tortillas and fill with the cooked chicken, refried beans, shredded lettuce, shredded tomato, chopped onion, and Cheddar cheese.
