Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 small onion
  • 2 Tbsp. oil
  • 1/2 cup chicken broth
  • 12 corn tortillas
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded Cheddar cheese
  • 1 can diced green chili peppers

Instructions

  1. Sauté the chopped onion in oil until softened.
  2. Add the cream of chicken and cream of mushroom soups to the sautéed onion.
  3. Stir until smooth.
  4. Add milk and shredded Cheddar cheese; stir until cheese is melted.
  5. Stir in chicken broth and diced green chili peppers.
  6. Place a layer of tortilla strips on the bottom of a greased 2-quart casserole dish.
  7. Pour some sauce over the tortilla strips and add a layer of cooked chicken pieces.
  8. Repeat layers, ending with a layer of sauce on top.
  9. Bake at 350°F for 35 to 45 minutes until bubbly and heated through.
