Ingredients

  • 2 c. bean mixture
  • 8 c. water
  • 1 large onion, chopped
  • 1 lb. lean ham, diced
  • 1 (10 oz.) can diced tomatoes and green chilies
  • 1 clove garlic, minced
  • 1 (16 oz.) can whole tomatoes

Instructions

  1. In a large pot, combine the bean mixture with water and bring to a boil.
  2. Add chopped onion, diced ham, diced tomatoes with green chilies, minced garlic, and whole tomatoes to the pot.
  3. Reduce heat to low and simmer uncovered for about 1 hour and 30 minutes, or until beans are tender, stirring occasionally.
