Refrigerated tomato relish with vibrant flavors of vinegar, hot peppers, and sweet sugar, perfect for adding zest to beans or serving as a condiment all year round.

Ingredients

  • 8 lb. ripe tomatoes, peeled and chopped
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 2 bell peppers chopped
  • 2 hot peppers chopped
  • 1 cup white vinegar
  • 1 cup sugar
  • 1/4 cup mustard seed

Instructions

  1. Mix together all ingredients.
  2. Put in a gallon glass jar and refrigerate.
  3. Can half the recipe if desired.
  4. Will keep for 12 months refrigerated.
  5. Good with dry beans.
