Ingredients

  • 1 cup dark brown sugar
  • 1 1/4 cups plus 2 teaspoons water
  • 1/2 cup vegetable shortening
  • 2 cups raisins
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sifted flour
  • 1 teaspoon baking powder

Instructions

  1. In a pot, boil brown sugar, 1 1/2 cups water, vegetable shortening, raisins, nutmeg, cinnamon, and cloves for 3 minutes. Cool completely.
  2. Preheat oven to 325°F (160°C).
  3. Dissolve salt and baking soda in 2 teaspoons water.
  4. Add the dissolved salt and baking soda to the cooled mixture.
  5. Blend in the sifted flour mixed with baking powder.
  6. Pour the batter into a greased and floured 8-inch square pan.
  7. Bake for 50 minutes.
  8. Allow to cool, then store tightly covered for up to 1 month.
