Ingredients

  • 2 1/4 cups sifted cake flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 eggs

Instructions

  1. Sift together the cake flour, baking powder, salt, and sugar.
  2. Put the shortening in a large mixing bowl and cream until softened.
  3. Add the dry ingredients, milk, and vanilla to the creamed shortening and mix well.
  4. Beat the mixture until smooth.
  5. Add the eggs one at a time, beating after each addition.
  6. Pour the batter into 2 greased cake pans or 1 loaf pan.
  7. Bake at 375°F for about 25 minutes for layers or 35 minutes for a loaf cake.
